Pea microgreens are the young seedlings of the pea plant, harvested soon after the first leaves develop. They are fresh, sweet, and have slightly earthy flavor, reminiscent of tender garden peas. They are known for their crisp, juicy texture and can be enjoyed raw or lightly cooked.
